I don't know of any good robust tool out there (maybe someone will write a
conduit to use with the "Mail" app??), but there is some code out there that
can accomplish what you want using SyncMemo..

Included with PilotManager/SyncMemo in the contrib section:

PilotDrop - drag&drop email messages from mailtool into your SyncMemo file
	    area.. the message will appear in the Memo app after your next
	    sync.

MemoEmailer - a post-update script for use with SyncMemo.  This script looks
	      for memos in a certain category (eg "Outbox") and sends them out
	      as email.. to send email just create a memo in this category and
	      it will be sent after your next hotsync.

Some technical knowledge may be required to get these tools setup, but they
work.. good luck!
