EST5EDT is correct.

To answer the question literally, you'll find it in
 /usr/share/lib/zoneinfo
If you look there, you'll see that the file Eastern in the US sub-directory
and the file EST5EDT are hard links to the same inode (120847 in my filesystem)
    120847 -rw-r--r--   3 bin      bin         1250 Jul 16  1997 EST5EDT
    120847 -rw-r--r--   3 bin      bin         1250 Jul 16  1997 US/Eastern
